Mom, What's For Dinner? - Quick Kids Meals

With homework, choir, the science project that's due tomorrow and tae kwon do, who has energy to prepare a nourishing meal for the kids after school? You do! You will have time if you serve an quick to cook kids' meal.

Sure it's effortless to toss a hotdog in the microwave or set a tortilla in a pan on top of the range, sprinkle on some cheddar cheese and ninety seconds later have a plain quesadilla, but what's the joy in that? Casseroles or one-pot dishes usually go over well with the kids; and are simple to throw together.

Try this simple meal:

1 – lb. ground beef
1 - 16 oz jar spaghetti sauce
1 - cup water
1 1/2 cups uncooked elbow macaroni
1 - cup shredded mozzarella cheese

Sprinkle beef into a 3-quart glass casserole and microwave for 4-5 minutes, or until beef is no longer pink. Mix and rotate halfway through cooking time. Drain Beef. Stir in sauce, water and pasta. Microwave another 13 minutes, stirring halfway through. Sprinkle cheese on top and allow to sit covered about 7 minutes before serving. Serves a couple hungry kids.

There are tons of meals you can create with lean ground beef. Any recipe that asks for lean ground beef will work just dandy substituted with ground turkey, chicken or venison instead. The quick and easy recipe below uses ground meat. It takes nearly an hour to cook but merely a blink to prepare.

Mix together:

2 lbs. ground meat
1 can condensed cheddar cheese soup
1 can condensed mushroom soup
Crinkle Cut French Fries

Brown ground beef and strain the grease. Add both soups to strained ground beef and place into a 9x13 greased baking dish. Top with frozen crinkle cut French fries and cook at 350 degrees for 50-55 minutes or until fries are light brown.

Taco salads are very fast and easy to prepare. Begin with lettuce. Add tomato, onion and cheese (if your kids will approve of it.) Prepare some ground beef and add in an envelope of taco seasoning – or just include some taco sauce to the meat. Then add smashed tortilla chips or Fritos. Top with salsa or Catalina dressing. Don't forget the sour cream and guacamole if desired! Kids love this meal!

For a fast, on the go, healthy, cold meal you'll need:

Large lettuce leaves (not bagged lettuce)
Turkey or ham deli meat
Sliced cheese
Condiments

Step 1: Peel off a large lettuce leaf.
Step 2: Assemble meat, cheese, and condiments.
Step 3: Roll up and stick a toothpick in the center.
Step 4: Gobble Up.
Step 5: Wipe your face, there is a bit of mayo. on your cheek.

How about a unique twist on the normal macaroni and cheesekids recipe?

1 (16 ounce) package pasta (elbow, seashell, bowtie – doesn't matter, just not spaghetti)
1 c. cottage cheese
1/4 c. sugar
1/2 teaspoon cinnamon

1. Cook pasta according to package instructions.
2. Mix sugar, cottage cheese,and cinnamon with drained pasta.
3. Nibble and add more sugar or cinnamon, if desired.
4. Serve right away. Yum!

Incorporate a little creativity to put a spin on a regular meal and even with the crazy evening activities you will have time to cook up a delicious meal for your kids evening meal.
