Chocolate Dipped Kisses

They will melt in your mouth.

Ingredients
3 large egg whites
3/4 cup sugar
1/4 tsp. salt
1 1/2 cup chocolate chips
1 1/2 tsp. vegetable shortening

Directions
1. Heat oven to 200°.
Line 2 large baking sheets with parchment or wax paper.

2. In large bowl, combine egg whites, sugar, and salt. Place the bowl over a pot of gently simmering water, and whisk constantly until sugar dissolves, about 5 minutes. The mixture will be warm to the touch.

3. Remove bowl from water bath. With mixer on high speed, beat the egg-white mixture until stiff peaks form.

4. Spoon the meringue into a large zip-top bag and seal. Snip one corner off the bag and pipe 2-inch-size kisses onto the baking sheets. Bake 1 hour.

5. Turn off oven. Let the meringues completely cool inside the oven, about 1 hour.

6. Combine the chocolate chips with the vegetable shortening in a small heat proof measuring cup. Microwave 30 seconds on Medium High, stir the chocolate, and microwave 30 seconds more. Continue until melted.

Line your counter with wax paper. Dip the bottom of the cooled meringues into melted chocolate and place on wax paper to cool.

Makes 36.
